Banana Walnut Muffins

Serves: 4-5
  • 2 Really Ripe Bananas
  • ¼ Cup of Raw Maple Syrup
  • ¾ Tsp. of Baking Soda
  • 2½ Tbsp of Coconut Oil
  • 2 tbsp. of Orange Juice (freshly squeezed)
  • Dash of Sea Salt
  • 1 Tbsp. of Cinnamon
  • ½ cup of Oat Flour
  • ½ Cup of Almond Flour
  • ½ Cup of Unsweetened Vanilla Almond Milk
  • 1 Tsp. of Vanilla Extract
  • 2 Handfuls of Raw Walnuts
  1. Preheat the oven to 350 degrees
  2. Start to mash your bananas
  3. If your oats or almonds aren't in a flour already, place them in blender or food processor separate until the desired texture for each.
  4. Mix the oat flour with almond flour in a bowl.
  5. Next, place all your dry ingredients such as baking soda, cinnamon, and sea salt together and place with the mixed flour.
  6. In your other bowl with mashed banana, place your orange juice, coconut oil, almond milk, vanilla extract, walnuts and maple syrup.
  7. Mix well and combined with dry ingredients.
  8. Once your batter is ready, be sure to taste it to assure it is sweet enough. (your banana has a lot to do with it, if you need more sugar, I recommend adding ¼ cup of stevia or coconut sugar)
  9. On a pan, start to place your "mini' cupcake sheets and spray each with non-stick coconut oil. (you can use normal sized but they will require more batter in each)
  10. Place 2 Tbsp. of Batter in each sheet.
  11. Top each one with additional cinnamon, almonds, walnuts (optional)
  12. Bake for 20-25 minutes. (these will be extra moist so if you prefer more dry, cook an additional 5-10 min)
  13. Let cool for 5 minutes and gobble up!
