Coconut Oat Balls or Cookies?

Serves: 12-15
  • 2 cups of Rolled Oats
  • ¾ cup of Almond Flour
  • 1 Tsp. of Baking Soda
  • Dash of Cinnamon
  • Dash of Sea Salt or Himalayan Salt
  • Splash of Coconut Milk
  • ½ cup Raw Maple Syrup
  • ¼ cup of Brown Coconut Sugar
  • 3-4 Tbsp. of Coconut Oil
  • ½ Cup of Unsweetened Shredded Coconut
  1. Preheat your oven to 350 degrees
  2. Place your oats, almond flour, baking soda, shredded coconut, coconut sugar, cinnamon, and salt in a bowl and whisk together.
  3. Next, make sure your coconut oil is melted to a liquid. If not, place in microwave for about 20 seconds or more if needed.
  4. Now, in a separate bowl, place your coconut milk, coconut oil, and maple syrup and mix well. (important)
  5. Place the liquid in dry mixture and blend until moist. (It may seem that it's not enough liquid at first, but it will come together well as you keep stirring)
  6. Now, start to form cookies and place on parchment paper/baking sheet.
  7. Bake for 10-12 minutes.
  8. *Raw Coconut Oat Balls* (Optional: These taste like Irish Potatoes!)
  9. Simply form this batter into balls and place on parchment paper in the freezer for about an hour or so.
  10. Enjoy either way!
