Walnut Pear Salad with Quinoa and Sweet Potatoes garnished in Parsley

Serves: 1
  • 2 Cups of Romaine Lettuce
  • 1 handful of Walnuts
  • 1 Pear
  • 1 Sweet Potato
  • ½ of a Yellow Tomato
  • ½ Cup of Quinoa
  • 2 Tbsp. of Apple Cider Vinegar
  • 1 Tsp, Grated Ginger
  • 1½ Tbsp. of Balsamic Vinegar
  • 1 Tbsp. of Olive Oil
  1. Bring ¾ Cup of water to a boil and place your quinoa in it to cook for 7-8 minutes. (the seeds should appear puffy when complete)
  2. Now, Preheat oven to 375 degrees.
  3. Next, rinse your sweet potato and dice up.
  4. Place on foil or non-sticking baking sheet with drizzle of olive oil and parsley.
  5. Bake for 10-15 minutes until somewhat tender.
  6. In a bowl, place your apple cider vinegar, splash of water, and grated ginger. Stir well and place aside.
  7. Next, dice your pears and place with the walnuts on top of the salad on plate.
  8. Drizzle your dressing to top with for extra flavor.
  9. Once your quinoa is complete, drain the water, and place some on the side of your plate with some balsamic vinegar.
  10. Lastly, let your sweet potatoes cool and dice your yellow tomato up to mix with.
  11. Place this on plate for an extra side.
  12. Grate some pepper and sea salt on top of dish to complete (optional)
  13. Enjoy!
